Happy Labor Day! I hope you are all enjoying your long weekend. Today I thought I would post about the blueberry pie that my mom made for our barbecue later today. Our family has been making this pie for as long as I can remember, that even the pages of the cookbook have started to fall out. Pair a slice with a scoop of vanilla ice cream and you have the perfect Labor Day cookout dessert! It is the perfect treat to officially end summer!
Pillsbury Blueberry Pie Filling
4 cups fresh or frozen blueberries, thawed, well drained
3/4 cup sugar
1/4 cup all purpose flour
1/4 teaspoon cinnamon
2 teaspoons lemon juice
2 tablespoons margarine or butter
In large bowl, combine blueberries, 3/4 cup sugar, flour, 1/4 teaspoon cinnamon and lemon juice. Mix lightly
Martha Stewart Sweet Pie Crust
2 1/2 cups in bleached all-purpose flour
1/4 teaspoon salt
3 tablespoons sugar
1 cup (2 sticks) unsalted butter, chilled and cut into small pieces
4 tablespoons ice water
2 large egg yolks, lightly beaten
Put flour, salt, and sugar into the bowl of a food processor. All ingredients should be cold. Add butter and process for 10 seconds. Add the ice water bit by bit, alternating with egg yolks; process until dough holds together. Do not over process. Divide dough in half and chill for at least an hour.
