Just thought I would write a quick post about the cupcakes that I made for my best friends surprise 17th birthday party. So of course I made her favorite flavor, Chocolate! I made the Georgetown Cupcake Chocolate Cupcakes, I’ll post the recipe down below. For the icing I did a vanilla buttercream but instead of leaving it white I dyed it purple and green. Which are her favorite colors! Dyeing your frosting is a fun way to add a little something extra to your cupcakes or cake! I tend to color mine based on the holidays or the event that I am attending.
Chocolate Cupcake Recipe
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
8 tablespoons butter
1 1/4 cups sugar
2 large eggs
1 1/4 teaspoons pure vanilla extract
1 cup whole milk
1/2 cup cocoa powder
Directions
1. Preheat oven to 350 degrees and line a cupcake pan with twelve paper baking cups
2. Sift together the flour, baking soda, and salt. Set aside
3. Cream butter and sugar in the bowl of the stand mixer
4. Combine vanilla extract and milk in a large measuring cup
5. Reduce the speed to low. Add one third of the flour and then one third of the milk. Repeat until all incorporated
6. Add the cocoa powder mixing until just incorporated
7. Use a standard size ice cream scoop. Bake 18-20 minutes
Vanilla Buttercream Recipe
16 tablespoons unsalted butter
4 cups confectioners sugar, sifted
1 teaspoon whole milk
1 teaspoons pure vanilla extract
1/8 teaspoon salt
Directions
1. Combine all ingredients and mix at high speed for 3-5 minutes or until light and fluffy
